Pickled Watermelon Radish

INGREDIENTS
1 watermelon radish, peeled and julienned
1/4 cup rice vinegar or apple cider vinegar
2 tablespoons sugar or maple syrup
PREPARATION
Combine vinegar and sugar in a large bowl. Mix well, then add radish and toss to coat. Let the mixture sit in the fridge for 10 minutes.
Add a pinch of salt before serving.
Refrigerate in an airtight container for up to a week.
