Thank you Harleston Towles and Rooting Down Farms!
Kohlrabi, how I’ve missed you! Its mild flavor is similar to that of a radish. These cuties are easiest used in a big green salad sliced thinly or chopped into chunks. Add some minced shallot, a splash of balsamic vinegar, good olive oil, s + p and voila.

Harleston’s storage tips: If greens or herbs of any kind begin to wilt at any point or at pick up, put them in a big bowl of ice water for 20-30 minutes. Almost all produce is washed and should go in the refrigerator. Greens should be removed from kohlrabi, spinach, and carrots immediately upon receipt. The roots will dry out otherwise. Juice radish and carrot greens. Kohlrabi greens can be sauteed or cooked like kale or collards. Store radish, carrot, and kohlrabi in a plastic bag for months. Spinach can stay in it's respective bag. Oranges, celery, parsley, and brussel sprouts can go in their own plastic bag.
